11A - proper cooling methods used: adequate equipment for temperature control
Regulation: 511-6-1.04(6)(e) - cooling methods (pf, c)
Observed individual portion containers of potato salad and individual containers of salads in reach-in cooler above 41F. Temperatures were not observed to decrease in the units fast enough to place items on serving line to be held on time. These items were moved to walk-in cooler. It is recommended to use walk-in cooler to ensure these items cool completely.
