6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed cartons of milk at 55F on shelf in walk-in cooler. These are taken out to the class rooms on carts in the morning. Milk cartons not consumed are collected approximately an hour later and taken back to the walk-in cooler. These should be under temperature control when they are taken out to the classrooms if the extras are to be returned to the walk-in cooler.
Facility should use ice or chilled insulated coolers to keep the milk cold. If milk it is to be sent out to classrooms without temperature control. They must be discarded.

4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed concentration of quarternary ammonium sanitizer above 500ppm in 3-compartment sink while employee was placing utensils into solution.
Corrected on site by adding freshwater to the solution until it was below 400ppm.
Facility should use their test strips to ensure the solution is between the 150 and 400ppm as directed by the label.
