-Observed cooked chicken stored underneath raw marinated beef and directly next to raw marinated chicken in the walk in cooler of the facility. Storage was noted on previous inspection. *COS, items were stored to prevent contamination by PIC upon request.

-Observed open package of cookies and non approved employee drinking container (Single service cup without lid and straw filled with soda). stored on prep top table across from the prep top cooler in the rear kitchen area upon entry into the facility. *COS, Employee drink was moved to approved employee drinking holster station and lid and straw were added upon request.

-Observed large covered container of cooling kung pao chicken in the walk in cooler of the facility not cooling to 70F or below within the first 2hrs of cooling. PIC stated and was notated on label that cooling began at 12:00pm. At 2:37pm chicken was 83F-91F. *COS, Container of Kung Pao chicken was discarded by employee upon request.

-Observed uncooked chicken (manufacturer's labeling) stored above shelf containing cooked chicken, raw steak, and pooled raw shell eggs in the walk in cooler of the rear kitchen area of the facility. -Observed cooked chicken stored directly next to raw marinated steak in the walk in cooler of the rear kitchen area of the facility. *COS, Food items were stored to prevent contamination based off of cook temps upon request by employee.

-Observed dishes and pots soaking in bleach sanitizer solution in 3 compartment sink of rear kitchen area of the facility with chemical concentrations around 200ppm. -Observed bleach sanitizer solution stored on shelf in front service area of the kitchen across from heat lamp buffet with chemical concentrations around 100ppm-200ppm. *COS, PIC diluted both sanitizer (Bleach) solutions to proper chemical constraints around 50ppm-100ppm

-Observed cook stirring cooked Lo Mein noodles with bare hands (no gloves) upon entry into the rear kitchen area. *COS, Cook was coached by PIC and noodles were discarded. Cook washed hands and donned new gloves.
