Quat sanitizer solution in-use not at proper minimum strength for sanitizing prep table & espresso machine. COS, PIC refreshed Quat sanitizer solutions; Rechecked concentration and at proper minimum strength.
11C - approved thawing methods used

BIAM pork sausage observed thawing in pitcher of standing water. COS, Water was turned on by PIC to allow sausage to finish thawing in approved method of under running water.
