6-1D - time as a public health control: procedures and records
Regulation: 511-6-1.04(6)(i) - time as a public health control (tphc) (p, pf, c)
-Observed TCS food items (Shredded Iceberg Lettuce, Sliced Tomatoes, Sliced Mushrooms (Frozen Bag), & Sliced White and Yellow American Cheeses) stored on sandwich prep board in the kitchen without time marking indicating discard times. CA: All potentially hazardous food items under time as a public health control must be marked with discard times. *COS, Items were marked with discard times employee.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
-Observed hood ventilation system above broiler area with accumulations of soot, grease and debris in the rear kitchen area of the facility. Missing filters were also present as well. Last service for hood system was 10/25 with next scheduled service listed as 1/26; *CA- Equipment, Food/Nonfood-contact surfaces, and utensils, food-contact surfaces of equipment & non-food contact surfaces must be free of accumulations. *CTM, Have hood vent system serviced and send documentation to Kristen.Tyler@dph.ga.gov within 72hrs.
