Observed employee drink in the dishwashing area not in a single service container with a lid and straw. CA: Employees shall not drink except in designated areas to prevent contamination and drink shall be in single service container with lid and straw. COS,PIC moved the drink to the designated area to prevent contamination.
4-2A - food stored covered
Regulation: 511-6-1.04(4)(c)1(iv) - packaged & unpackaged food, food stored covered(c)
Observed several food items stored uncovered in the reach in coolers and walk in cooler in the main kitchen. CA: food shall be stored covered. COS, PIC covered all food items in the facility to prevent contamination.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed build up of mold in the ice maker in the server station next to the hibachi station. CA: food contact surfaces shall be clean to sight and touch. COS, PIC washed rinsed and sanitized the ice machine.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(5)(j) - using dressing rooms & lockers, used for changing clothes and storing employee belongings (c)
Observed employee belongings stored in the dishwashing area. CA: employee belongings shall be stored in the designated area to prevent contamination. COS, PIC moved employee belongings to the designated area.
