11A - proper cooling methods used: adequate equipment for temperature control
Regulation: 511-6-1.04(6)(e) - cooling methods (pf, c)
Observed sausage patties & links being cooled in walk-in cooler with tight saran wrap. Penne chicken & broccoli alfredo pasta observed sitting out at prep table packed in metal container and covered. COS, Saran wrap was pulled back to allow sausages to finish cooling to <41F and chicken & broccoli alfredo pasta was portioned into smaller containers to properly cool by PIC upon request.
