4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Quat sanitizer solution in-use at 3-compartment sink not at minimum strength upon testing. COS, Water was drained from compartment and refreshed with new sanitizer solution. Retested and at 200PPM.
11A - proper cooling methods used: adequate equipment for temperature control
Regulation: 511-6-1.05(3)(a) - cooling, heating, and holding capacities (pf)
Walk-in cooler (main source for cold holding) not maintaining <41F. Have unit serviced within timely manner and send verification to Bernotta.Linder@dph.ga.gov once issue is resolved.
