Regulation: 511-6-1.04(6)(e) - cooling methods (pf, c)
Cooling method being used/observed were not adequate in rapidly cooling salsa Verde and mild salsa; Salsas were in deep containers with Saran wrapping and mild salsa with lid. COS, Salsa Verde and mild salsa were placed in ice bath & walk-in freezer to rapid cool by employees.
