11A - proper cooling methods used: adequate equipment for temperature control
Regulation: 511-6-1.04(6)(e) - cooling methods (pf, c)
Cooling methods (too deep/too much volume and covered) being used/observed were not adequate in rapidly cooling homemade ranch dressing and prepped diced tomatoes stored in reach-in cooler (RIC). COS, Bowls with ranch dressing were placed in walk-in freezer (WIF) and loosely covered to finish cooling. Bowls of ranch were placed on a proper ice bath to rapid cool.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Walk-in cooler (WIC) observed with accumulation of dust and other debris. Must be cleaned. Send verification to Bernotta.Linder@dph.ga.gov
