6-1C - proper cooling time and temperature
Regulation: 511-6-1.04(6)(d) - cooling (p)
Observed a container of chicken and a container of hard boiled eggs prepped at 5:29 am. Temped at ~12:00 pm 45-46 for the chicken and 43 for the eggs. COS staff informed of target times and temps and items discarded.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed debris on the casters of the breading stations. Observed food debris on reach-in-cooler shelves. Observed that handles of some reach-in-coolers had debris. All areas of the facility should be cleaned with sanitizer as often as necessary to keep them clean.
