Observed cheese at 44 degrees F in prep top cooler double stacked in plastic trays. C/A - stack in only one, preferably, metal, pan. COS - maanger placed cheese in metal pan.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(a) - equipment & utensils, air-drying required (c)
Observed pans stacked while wet (wet nesting) above sink. C/A - restack to allow pans to air dry
