PIC was unable to reference or explain the employee health policy, symptoms/illnesses that employees must report to PIC, when to restrict/exclude, what must be reported to the health dept. or how employees are informed of their reporting responsibilities. CA: An employee health policy that meets the GA DPH Food Rules shall be implemented. Detailed references emailed.
11C - approved thawing methods used

Observed ready to eat brisket was thawed on counter. Temperature was observed at 47 deg F. COS: PIC discarded brisket. BK method is to thaw in the walk in cooler.
15C - nonfood-contact surfaces clean

Observed dust build up on the front shelf with computers above the bagging area. CA: Increase cleaning frequency of nonfood contact surfaces.
