Observed mayo on line with a date mark for disposition of Wednesday- Inspection on Thursday and mayo still on line. PIC threw away and replaced.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.05(3)(d) - ventilation hood system, adequacy, adequate to prevent grease & condensation build-up (c)
Observed a build of excessive grease on hood. Hood will be professionally cleaned next week.
