12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed wiping cloth used for cleaning lying on the counter in the front kitchen area, Containers of chemical sanitizing solutions in which wet wiping cloths are held between uses shall be stored off the floor and used in a manner that prevents contamination of food, equipment, utensils, linens, single-service, or single-use articles. COS the wiping cloths were placed in the bucket between usage correctly.
17B - garbage/refuse properly disposed; facilities maintained
Observed the sliding door open on the dumpster , Receptacles and waste handling units for refuse, recyclables, and returnables shall be kept covered, With tight-fitting lids or doors if kept outside the food service establishment. COS the sliding door of the dumpster will bw closed.
17C - physical facilities installed, maintained, and clean
Observed the filter above the flat with heavy grease buildup The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food product. The manager will have the filter schedule to be cleaned by 04/30/2026
