Observed light come under the bottom and side of the doors in the kitchen, outer openings of a food service establishment shall be protected against the entry of insects and rodents by:
(i) Filling or closing holes and other gaps along floors, walls, and ceilings;
(ii) Closed, tight-fitting windows; and
(iii) Solid, self-closing, tight-fitting doors. The manager will fix the outer opening by 1/30/26
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(1)(g) - wood, use limitation (c)
Observed wood around the door not properly sealed or painted, all wood surface in the kitchen need to be painted or sealed properly to be non-arborescent . The owner will paint the wood by 2/6/26
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed the dirt and debris on the seals and bottom of the reach in cooler, The food-contact surfaces of cooking equipment and pans shall be kept free of encrusted grease deposits and other soil accumulations. The owner will clean the bottom of the reach in by 1/20/26
