Observed a clear bucket of dry foods (grits) not labeled or identified as required. Ensure the bulk of food or working containers are labeled or identified when transferred from the original container, including oils and spices. COS: Grits were labeled during the inspection.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed wet cloths not stored in the sanitizer buckets as required. Clothes were stored on a table in the dishwashing area. Ensure clothes are submerged in sanitizer. COS: Cloth was removed during the inspection.

Observed coffee filters not covered/protected from contamination in the front service coffee station as required. COS: Coffee filters were covered during the inspection.
