Observed Several food items not held at 41°F or below at multiple cold units. Milk held at the front service display cooler was 43°F, cheeses held at the front serviced cold buffet was 47°F and the tomatoes held in cold table at the serving line was 57°F. Corrective Action (CA) All time/temperature control for safety shall be held at 41°F or below for cold holding. The person in charge was informed to not use the display cooler for dairy or TCS Foods. Also, food stored in the cold buffet shall be stored in deeper pans (containers) to ensure they are fully maintained at 41°F or below. The cold table/ice bath at the front service area shall have more ice and the food shall be properly cooled before storing in the unit for service. COS: All concerned foods were discarded.

Observed mold build up in the ice chute of the soda machine at front service. CA: ice chute, dispensing nozzles shall be clean at frequency necessary to preclude accumulation of soil or mold. COS person in charge cleaned and call maintenance personals to a deep clean of the ice chute.
