2-2D - adequate handwashing facilities supplied & accessible
Hand sink located in the back of the kitchen had no napkins or soap available.
Placed inside the handwashing sink was a water hose making this handwashing sink inaccessible for use.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed 4 large plastic containers of raw chicken, a small plastic container of raw marinated chicken to have no date on them in the Walk in Cooler (WIC). According to the Person in Charge (PIC), they had been placed in the WIC since the day before. PIC placed the dates on each container.

Observed three cardboard boxes full of cooked chicken with no lids on the top shelf of the WIC. The chicken in each box measured 41F degrees or less. Advised PIC that cooked food could not be placed in cardboard and needed to be placed in a metal or plastic container with a lid.

Observed a full bag of onions to be placed on the floor under the three-comp sink. PIC placed bag 6 inches off the floor.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed back screen door to have a torn door sweep. Visible light is seen all around the edges. Pest traps show signs of previous pest activity, but no live pest activity was observed during the inspection. Door sweep must be replaced to further prevent pest activity.
