Regulation: 511-6-1.04(4)(c)1(iv) - packaged & unpackaged food, food stored covered(c)
Observed eggrolls and ragoons stored uncovered in reach-in freezers. Observed cinnamon and star anise seasonings stored uncovered in food storage area. Except as specified under paragraph 2 of this subsection and when cooling as specified in DPH Rule 511-6-1-.04(6)(e)2.(ii), storing the food in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled if protected from overhead contamination. Person in charge covered all food items.
4-2B - food-contact surfaces: cleaned & sanitized

Observed clean plates and utensils used for serving stored on racks with brown build-up. Equipment, Food-Contact Surfaces, Nonfood-Contact Surfaces, and Utensils.
- Equipment food-contact surfaces and utensils shall be clean to sight and touch. Priority foundation item must be corrected within 10 calendar days.
12A - contamination prevented during food preparation, storage, display

Observed containers of soup stored on floor of walk-in cooler. Observed rice stored in container and box of noodles stored on floor of food storage area. Except as specified in paragraphs 2. and 3. of this subsection, food shall be protected from contamination by storing the food: (i) In a clean, dry location; (ii) Where it is not exposed to splash, dust, or other contamination; and (iii) At least 6 inches (15 cm) above the floor. Person in charge placed all food items on racks above floor.
15C - nonfood-contact surfaces clean

Observed racks located in reach-in coolers with a build-up of food residue. Observed walls in main kitchen with build-up of food residue and grease. Equipment, Food-Contact Surfaces, Nonfood-Contact Surfaces, and Utensils. 2. The food-contact surfaces of cooking equipment and pans shall be kept free of encrusted grease deposits and other soil accumulations. 3. Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Priority foundation items must be corrected within 10 calendar days.
