Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
Observed handwashing sink next to prep-top cooler blocked by trash can. A handwashing sink shall be maintained so that it is accessible at all times for employee use. Person in charge moved trash can away from the handwashing area.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(a) - equipment & utensils, air-drying required (c)
Observed plastic containers wet-stacked on the rack above the 3-compartment sink in the main kitchen. After cleaning and sanitizing, equipment and utensils:
- Shall be air-dried or used after adequate draining before contact with food.
Person in charge rearranged containers to properly air-dry.
