Observed grease build-up on all three sinks of main kitchen 3-compartment sink. Rule: . Equipment food-contact surfaces and utensils shall be clean to sight and touch. Pf. Corrective Action: PIC can establish a written clean up schedule with employees signing their intials once task has been completed.

Observed multiple food products including TCS items that were held past their expiration date in both front service area and in main kitchen. Rule: (b) Expired Foods. Prepackaged sandwiches, eggs, infant formula, shucked oysters, milk, and time/temperature control safety foods that are labeled as “keep refrigerated” and that are for sale or service to the consumer or used as an ingredient in other foods shall be immediately discarded and shall not be sold, served, or used after the manufacturer’s expiration date or the sell-by date. P PIC discarded all items that were expired in front service and main kitchen area.
