Observed handwashing sink not reaching adequate temperatures. A handwashing sink shall be equipped to provide tempered water at a temperature of at least 100 degrees F through a mixing valve or combination faucet. Must correct violation within 10 calendar days.

Observed several containers of BBQ sauce and cooking oils stored on the floor in the main kitchen area next to the oven. Except as specified in paragraphs 2 and 3 of this subsection, food shall be protected from contamination by storing the food:
(i) In a clean, dry location;
(ii) Where it is not exposed to splash, dust, or other contamination; and
(iii) At least 6 inches (15 cm) above the floor. Person in charge properly stored containers of sauce and oil.

Observed several metal food trays wet stacking on the shelf near the 3-compartment sink in the main kitchen. After cleaning and sanitizing, equipment and utensils:
Shall be air-dried or used after adequate draining before contact with food; and
May not be cloth dried except that utensils that have been air-dried may be polished with cloths that are maintained clean and dry. Person in charge rearranged food trays to properly air-dry.

Observed facility lacking chemical testing kit for the chemical sanitizer used in the facility (chlorine). A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided. Must correct violation within 10 calendar days.
