Observed several containers of BBQ sauce and cooking oils stored on the floor in the main kitchen area next to the oven. Except as specified in paragraphs 2 and 3 of this subsection, food shall be protected from contamination by storing the food:
(i) In a clean, dry location;
(ii) Where it is not exposed to splash, dust, or other contamination; and
(iii) At least 6 inches (15 cm) above the floor. Person in charge properly stored containers of sauce and oil.

Observed several metal food trays wet stacking on the shelf near the 3-compartment sink in the main kitchen. After cleaning and sanitizing, equipment and utensils:
Shall be air-dried or used after adequate draining before contact with food; and
May not be cloth dried except that utensils that have been air-dried may be polished with cloths that are maintained clean and dry. Person in charge rearranged food trays to properly air-dry.

Observed facility lacking chemical testing kit for the chemical sanitizer used in the facility (chlorine). A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided. Must correct violation within 10 calendar days.

Observed handwashing sink located in back of main kitchen without running water. A handwashing sink shall be equipped to provide tempered water at a temperature of at least 100°F. Priority foundation item must be corrected within 10 calendar days. PIC stated that he would turn the water on to the handwashing sink.

Observed handwashing sink located in back of main kitchen blocked by a rolling cart. A handwashing sink shall be maintained so that it is accessible at all times for employee use. COS: PIC moved cart.

Observed several coolers lacking a shelf thermometer. In a mechanically refrigerated or hot food storage unit, the sensor of a temperature measuring device shall be located to measure the air temperature in the warmest and coolest part of the unit. Priority foundation item must be corrected within 10 calendar days. PIC stated he would purchase shelf thermometers.
