Observed reach-in cooler and reach-in freezers in main kitchen lacking thermometers. In a mechanically refrigerated food storage unit a temperature measuring device shall be located to measure the air temperature in the warmest part of a mechanically refrigerated unit. Priority item shall be corrected within 10 calendar days.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observed ice scoop stored on top of ice machine. During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored in the food with their handles above the top of the food and the container in a clean and protected location. Person in charge placed ice scoop in clean container.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(d) - nonfood-contact surfaces (c)
Observed build up of grease on floor behind fryer. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Core item shall be corrected within 72 hours.
