Equipment and utensils shall be designed and constructed to be durable and to retain their characteristic qualities under normal use conditions. (C) Corrective Actions: Person in Charge stated that the cooler has a work order placed on it to be repaired this week. The lower part of the unit will not be used for cold-holding TCS items until it has been repaired.

A few items had a date but the date marking was for more than 7 days. Refrigerated, ready-to-eat time/temperature control for safety foods prepared and held in a food establishment for more than 24-hours shall be clearly marked to indicate the date of prep or the date by with the food shall be used/discarded for a maximum of 7 days. The day of preparation shall be counted as Day 1. (Pf) Corrective Actions: Person in Charge (PIC) labeled all items with the proper dates.
