6-1A: .04(6)(f)Observed ranch stored in a reach in cooler with a temperature of 53 degrees F. The ranch was not made today and during conversation it was discussed that the unit was left open for a while for cleaning. Time/temperature control for safety food shall be maintained at 41°F (5°C) or below. (P) Corrective Actions: The ranch was placed in the walk in cooler to cool as the person in charge stated that the ranch was stored in the unit for one hour.

15A: .05(6)(q)1&3Observed a reach in cooler holding ranch that is made in the facility using TCS (temperature control for safety) product with an ambient air temperature greater than 41 degrees F. Utensils shall be maintained in a state of repair or condition that complies with the requirements specified under subsections .05(1) and .05(2) or shall be discarded. (C) Ambient air temperature, water pressure, and water temperature measuring devices shall be maintained in good repair and be accurate within the intended range of use. Corrective Actions: All TCS items were removed and the unit will not hold TCS food until the unit maintains an ambient temperature of 41 degrees or below.
