6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(h) - ready-to-eat time/temperature control for safety food, disposition (p)
Observed several Ready to Eat food items held greater than 7 day prep dates based on date labels. For ready to eat items prepared and held for more than 24 hrs,, post and follow 7 day discard date with prep date being day #1. Expired items disposed.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(1)(a) - materials, general requirements (p, c)
Observed several prep tables /shelves lined with tinfoil that was torn and rough. Do not use tinfoil to cover/line shelves as it is not durable nor easily cleanable. Correct by removing tinfoil and cleaning shelving by 6/5/26.
