Observed food handling staff utilizing ineffective hair restraints (pony tail thru hat). All food handlers shall physically restrain hair greater then 1/2" in length. COS.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(e)1,2,4 - equipment, utensil, linens, stored 6" off floor in clean, dry location (c)
Observed single service customer tasting spoons in container with food contact ends exposed to contamination (no similar order). Store utensils with food ends down or at least in same direction. COS.
14C - single-use/single-service articles: properly stored, used
Regulation: 511-6-1.05(10)(g)(1)&(3) - kitchenware and tableware, single-service/-use items properly handled to protect food-/lip-contact surfaces (c)
Observed to go cups on front line exposed to contamination in open holders. Store to go cups in covered dispensers, or leave in protective plastic sleeves, with only the bottom of the top cup exposed. COS.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(d) - nonfood-contact surfaces (c)
Observed accumulations of debris on wire rack shelving in walk in cooler. Clean surfaces at a frequency to prevent accumulations.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed damaged floor tiles (at pizza oven and floor drains) and ceilings (over pizza oven). Repair surfaces to provide a easily cleanable surface. Clean walls by dish line and machine.
