Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed an aluminum bin filled with sliced cheese in walk-in-cooler 1 (beside ice machine) that was not marked with a discard date. CA: All time/temperature control for safety (TCS) foods must be marked with a discard date if held cold for more than 24 hours.

Regulation: 511-6-1.07(2)(c) - floor and wall junctures, coved, & enclosed or sealed, water-flushed floors provided with drains & graded to drain (c)
Observed part of the rubber base coving peeling behind the dishwasher.
