Observed plastic containers on drying rack by 3 compartment sink wet stacked in back kitchen.
CA: After cleaning and sanitizing, equipment and utensils shall be air-dried or used after adequate draining before contact with food.
COS: PIC rearranged containers to allow draining and air drying.
17B - garbage/refuse properly disposed; facilities maintained
Regulation: 511-6-1.06(5)(b) - outdoor storage surface, constructed of nonabsorbent material & sloped to drain (c)
Observed outside dumpster sitting on gravel.
CA: An outdoor storage surface for refuse, recyclables, and returnables shall be constructed of nonabsorbent material such as concrete or asphalt and shall be smooth, durable, and sloped enough to drain to prevent the collection of surface water.
