12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed damp cloth on counter in front food service area.
CA: Cloths in-use for wiping counters and other equipment surfaces shall be held between uses in a chemical sanitizer solution.
COS: PIC removed cloth from counter.
14C - single-use/single-service articles: properly stored, used
Regulation: 511-6-1.05(10)(e)1&3 - single-service/single-use items stored 6" off floor in clean, dry location (c)
Observed single service items such as paper plates, plastic cups and waffle wrap not stored protected.
CA: Single service items shall be kept in the original protective package or stored by using other means that afford protection from contamination until used.
COS: PIC stored items covered. Advised PIC to invert items in use and get plastic bin with lid to store items in back room.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(2)(a) - equipment and utensils, constructed of durable materials (c)
Observed wood bar in front food service area no longer sealed in some areas.
CA: Equipment and utensils shall be designed and constructed to be durable and to retain their characteristic qualities under normal use conditions.
PIC will refinish and seal wood.
