5-1B - proper reheating procedures for hot holding
Regulation: 511-6-1.04(5)(h) - reheating for hot holding (p)
Observed hot dogs being reheated in warmer pass thru.
CA: Foods shall be reheated rapidly to 165F within 2 hours by microwave oven, stove top or oven.
COS: PIC reheated hotdogs in microwave to proper temperature.
4-2A - food stored covered
Regulation: 511-6-1.04(4)(c)1(iv) - packaged & unpackaged food, food stored covered(c)
Observed multiple items stored uncovered in freezer (fries, patties, onion rings) in main kitchen and RIC (candies and toppings) in front food service.
CA: Food shall be stored in packages, covered containers, or wrappings when not in use.
COS: PIC covered items.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed cake prep area not clean to sight and touch, with an accumulation of food debris.
Observed main kitchen and front food service prep top cutting surfaces with heavy scoring and staining.
CA: Equipment food-contact surfaces and utensils shall be clean to sight and touch.
Health dept. to check back by date indicated.
*4/8/26 UPDATE: Cake prep area was clean to sight and touch however; front service prep top was not. PIC stated she has it on her list and will get it done before the next check back. *4/17/26 UPDATE: New prep top cutting surfaces were ordered but they were the wrong size. Owner placed another order for the correct size. *4/21/26 UPDATE: Front food service prep top cutting surface was replaced.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(a) - equipment & utensils, air-drying required (c)
Observed employee grab plastic container to reheat hot dogs that was still wet and proceed to dry with cloth.
CA: After cleaning and sanitizing, equipment and utensils hall be air-dried or used after adequate draining before contact with food.
COS: Employee placed container to be re washed, rinsed and sanitized and grabbed another container to use.
14C - single-use/single-service articles: properly stored, used
Observed single use articles (cake base, sundae cups, food containers) stored on the ground in outdoor storage shed.
CA: Cleaned equipment and utensils, laundered linens, and single-service and single-use articles shall be stored in a clean, dry location and at least 6 inches (15 centimeters) above the floor.
COS: PIC removed items from floor and stored them on shelving.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(d) - nonfood-contact surfaces (c)
Observed soil and grease buildup throughout facility such as sides of equipment, rack shelving, floors, walls and ceilings in main kitchen and WIC.
CA: Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
Health dept to check back by correct by date.
*4/8/26 UPDATE: Spoke with owner upon follow up for risk factor violations, he stated he is in the process of updating (cleaning, painting & replacing) the facility ceiling tiles and walls and will work on the floors next.
17B - garbage/refuse properly disposed; facilities maintained
Regulation: 511-6-1.06(5)(o),(p) - using drain plugs; maintaining refuse areas (c)
Observed dumpster missing drain plug.
CA: Drains in receptacles and waste handling units for refuse, recyclables, and returnables shall have drain plugs in place.
Health dept to check back by correct by date indicated.
*4/8/26 UPDATE: PIC stated garbage company was contacted regarding the missing drainplug. *4/17/26 UPDATE: Dumpster drain plug was still missing upon visit.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.05(2)(n) - exhaust ventilation hood systems, designed to prevent grease or condensation from dripping on food/equipment (c)
Observed hood vent in main kitchen above grill and fryer with an accumulation of dust and grease.
CA: Exhaust ventilation hood systems in food preparation and warewashing areas, including components such as hoods, fans, guards, and ducting shall be designed to prevent grease or condensation from draining or dripping onto food, equipment, utensils, linens, and single-service and single-use articles.
Health dept. to be check back before date indicated.
*4/8/26 UPDATE: Hood vent filters were cleaned, and system scheduled to be serviced. *4/17/26 UPDATE: Hood system was serviced.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed multiple personal employee items throughout the facility not stored in designated areas such as a jacket hanging on bread rack, cheese stick in RIC at front food service, and lunch boxes stored above food product for facility use.
CA: Areas designated for employees to eat, drink, use tobacco products and electronic devices shall be located so that food, equipment, linens, and single-service and single-use articles are protected from contamination.
COS: PIC removed items and relocated them.
