Observed multiple TCS items cold holding in WIC in main kitchen above a temperature of 41°F. CA: TCS foods shall be maintained at 41°F or below or 135°F or above. COS: PIC discarded all TCS foods above 41°F and relocated TCS foods under 41°F to RIC. Items actively cooling were moved to RIC. Health dept to check back by correct by date - TCS foods not to be stored in WIC until checked off by health dept.

Observed multiple trays of mac n cheese holding at a temperature below 135F in warming cabinet in main kitchen area (see temp log). CA: TCS food items to be hot held at 135F and above. COS: PIC stated mac n cheese had been placed 30 minutes ago therefore reheated food items to 165F and above.
