Warewashing machine is not reaching mandated minimum of 120 degrees on a consistent basis. Have the unit serviced by a professional or add a secondary hot water heating source to supply this unit. During servicing, replace broken thermostat and replace with a permanently mounted device. Contact EHS within 30 days, when this machine is functioning properly.

Items in both freezers were missing dates or not legible. Remedy labeling issue by using bins or stickers so they can be easily read.

Warewashing machine not reaching 140 degree minimum rinse cycle set by data plate. Maximum temperature reached was 105 degrees, switched to 3 compartment sink with bleach as a disinfectant until the machine can be repaired. This machine may require a hot water booster pump if the manufacturer temperatures cannot be reached.

Warewashing machine temperature gauge not operable. Fire suppression system has not been checked since 2012, have system tested ASAP.

Pf Note: Inspector observed no hot water available at either of the two handsinks in the main kitchen. One only reached a maximum temperature of 86F while the other only reached a maximum temperature of 75F.
