Prep top cooler had multiple items that were not dated or labeled correctly. One gallon of expired milk found in pastry cooler and expired juice found in lower walk in. Items were voluntarily discarded.

According to the manual of the operations instructions the dish machine must hit a final rinse of 180F to be functioning properly. PIC informed and stated they would use the three compartment to sanitize the dishes.
