6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Deli meat, dairy and tomatoes held in walk in cooler A above 41 degrees. These items were temped between 44-46 degrees. High risk items moved to secondary walk in cooler B that was holding temperature at 39 degrees.
1-2B - certified food protection manager
Regulation: 511-6-1.03(3)(a) - food safety manager certification (pf)
CFSM certificate expired in 2024, certificate has not been renewed. Renew certificate within 30 days and email proof of certification to EHS: brad.krzyzanowski@dph.ga.gov

Outdoor dumpster area has evidence of food debris that needs to be cleaned ASAP to prevent pests.
