Observed food stored uncovered on the cooling rack. C/A: When cooling, store foods at least partially covered to allow proper cooling and coverage.
4-2B - food-contact surfaces: cleaned & sanitized
Observed pink buildup inside the bulk ice machine. Observed black buildup inside the smaller ice bins. C/A: Clean. Increase cleaning frequency to limit buildup.
12B - personal cleanliness

Observed an employee wearing bracelets during active food prep. C/A: No jewelry may be worn on the arms or wrists during active food prep.
16C - sewage and waste water properly disposed

Observed standing eater throughout the kitchen. PIC stated there is a broken pipe in dishwashing area causing leakage, and there is a workorder in place. C/A: Have pipe fixed ASAP. Clean up water throughout service and ensure drains remain functioning.
