Observed scoop / handle improperly stored inside containers of rice and beans. C/A: When storing utensils with food, ensure the handle is above the food and the container.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(a) - equipment & utensils, air-drying required (c)
Observed wet nesting of clean dishes. C/A: Allow dishes to properly air dry before stacking.
14D - gloves used properly
Regulation: 511-6-1.04(4)(n)2,3,4 - gloves, use limitations, slash resistant gloves & cloth gloves (c)
Observed an employee rinse their gloves with water in prep sink. C/A: If employees gloves become soiled or torn during food prep, they must change them and washing their hands in a designated handwashing sink.
