Routine
Cold-Holding was assessed and incompliance unless noted in the temperature log. If foods in the hot holding unit cannot maintain 135F or above, suggested using time control. Time control shall be labeled with a start and discard time. If using time control, please provide time control written procedures at each routine inspection. NOTE: Only chicken sandwiches with cheese were hot holding in the hot holding unit. Some sandwiches were 135F and some were hot holding below 135F. Ensure personal drinks are stored properly. Emailed the following to PIC; 1. time control written procedures 2. inspection report
