Cold-Holding was assessed and incompliance unless noted in the temperature log. Hot-Holding was assessed and incompliance unless note in the temperature log. Ensure tiles in front of the prep sinks in the kitchen and in the storage area is in good repair by next routine inspection. Ensure servers are not while watches or any hand/wrist jewelry while handling foods such as slicing lemons. Informal required within 10 calendar days; 3/19/26. Failure to correct violation by informal may result in permit suspension. Permit will be reinstated when violation is fully corrected. Fees will be charged accordingly for any violation which cannot be corrected on-site during inspection. Repeat violations may result in permit suspension. 2-1C: .04(4)(a)1,2,3At the beginning of the inspection, observed server cutting lemons with bare hands. Except when washing fruits and vegetables, food employees shall not contact exposed, ready-to-eat food with their bare hands and shall use suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment. (P) Corrective Actions: Server washed hands and put on gloves. Verbally told PIC to discard lemons and prep fresh ones.

4-2B: .05(6)(n)After multiple testing, observed kitchen dish machine not dispensing chlorine. A chemical sanitizer used in a sanitizing solution for a manual or mechanical operations must meet a specified minimum concentration (for chlorine sanitizer it must be 50-100 ppm; for quat ammonia, it must be used according to the manufacturer's specifications).
