The following documents were given to PIC (person in charge); 1. New rule checklist (signed) 2. FDA sesame allergy fact sheet and poster 3. employee health policy PIC was coached on the new rule change. PIC was also verbally coached on when to wash hands. During inspection, PIC stated that food employees had been using the three compartment sink to wash apples due to vegetable sink overflowing. Ensure apples are washed in the vegetable sink only. PIC was coached on where to wash hands and where to was vegetables. Fees will be charged accordingly for any violation which cannot be corrected on-site during inspection. PIC (person in charge) stated that the handsink did not have hot water and that food employees had been using the three compartment sink and the bathroom handsink to wash their hands. A handwashing sink shall be equipped to provide tempered water at a temperature of at least 100ºF (38ºC) through a mixing valve or combination faucet. (Pf) Corrective Actions: During exit interview, the main manager over the kitchen fixed the handsink. Handsink held the temperature 118F.
