Observed that the prep top cooler on sandwich makeline not maintaining Time/Temperature Control for Safety (TCS) foods consistently at 41F or below. Missing pan from unit can also contribute to cool air loss in order to keep pans with TCS items cold.

Observed inadequate cooling methods for time/temperature for safety food items. (ex. Pans are tightly sealed with plastic wrap, pans are stacked on top of each other, pans with large amounts of food that slows down the cooling process, product placed in coolers that do not constantly maintain 41F or below).
