Observed improper cooling methods are used to cool Time/Temperature Control for Safety (TCS) foods (ex. food items are being cooled in coolers that are in constant use, container contents are too large, food items are left at room temperature for extended periods of time).
12A - contamination prevented during food preparation, storage, display

Observed boxes of food on the floor in walk in freezer.
12B - personal cleanliness
Regulation: 511-6-1.03(5)(j) - hair restraints (c)
Observed each food handler does not have hair properly restrained while preparing food items.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed wiping towels wet with food debris are not being stored in sanitizing solution in between uses.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observed scoops without handles (ex. bowls and metal containers) are being stored inside bulk food items, such as beans and salt.
14D - gloves used properly

Observed single use gloves are being used for more than one task.
