Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Sanitizer bucket located near cash register not registering on sanitizer test strip. Sanitizer bucket was re-made to proper strength and PIC instructed to change out buckets every 4 hours to ensure proper strength of solution at all times.

Regulation: 511-6-1.05(10)(e)1,2,4 - equipment, utensil, linens, stored 6" off floor in clean, dry location (c)
several boxes containing soda syrups in BOH observed on the floor not 6inches off the floor. PIC instructed to place boxes on rack at least 6" off floor.
