Instructed PIC to have all items properly date marked if they are removed from their original container or once they have been opened and used. Except when packaging food using a reduced oxygen packaging method, and except as specified in paragraphs 5 and 6 of this subsection, refrigerated, ready-to-eat, time/temperature control for safety food prepared and held in a food establishment for more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded, when held at a temperature of 41°F (5°C) or below for a maximum of 7 days. Observed blood residue accumulating at the bottom of a reach in freezer. PIC stated she will have the area cleaned. Nonfood-Contact Surfaces. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.

Observed a blackish residue along the chute of the ice machine. In equipment such as ice bins and beverage dispensing nozzles, equipment shall be cleaned at a frequency specified by the manufacturer or at a frequency necessary to preclude accumulation of soil and mold. COS: PIC had employee adequately clean the chute of the ice machine.

Observed non-food contact surfaces of equipment with soil and food debris. Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. COS: PIC adequately cleaned the non-food contact surfaces.

Observed several personal drink bottles stored in the reach-in cooler, located nearest dry storage area, with TCS items to be served to residents. Employees shall consume food only in approved designated areas separate from food preparation and serving areas, equipment or utensil areas and food storage areas. COS: PIC removed personal items and designated a storage area.

Observed reach-in coolers lacking temperatures measuring devices in the warmest part of the unit. n a mechanically refrigerated or hot food storage unit, the sensor of a temperature measuring device shall be located to measure the air temperature in the warmest part of a mechanically refrigerated unit and in the coolest part of a hot food storage unit. COS: PIC obtained temperature measuring devices to place in the units.
