6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed chicken at 54 & 56, boiled eggs at 51, peach cobbler at 51 in walk in cooler. Ambient of walk in at 51. COS: manager discarded out of temp items and moved items still in temp. Fan froze up on walk in cooler. Do not use until repaired and checked by health department.
