Observed rags laid over milk crates by oven unit. Store linens that are unclean at a designated area.

Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Observed walk in cooler floor with damage, tears, needs repairing. Observed metal rack at the three compartment sink rusting and flaking paint, discard.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
No test strips available to test sanitizer for dishwasher.
15C - nonfood-contact surfaces clean

Observed bulk containers, flour, sugar, etc., with food debris on tops, clean. Replace broken lid on yellow cake container. Observed buildup of food on bulk seasoning containers, cinnamon, Italian seasoning, clean or use a different storage unit.
17C - physical facilities installed, maintained, and clean

Observed mildew buildup on wall and floors at dishwasher unit, dust buildup on air conditioning registers through kitchen.
