Recommended placing something weighted against the door to be sure it stays closed tightly. Also recommended frequent temperature checks of food items and if any food item thaws, cook immediately and serve or discard.

Observed Diced Tomatoes, mixed vegetables, and shredded lettuce at 47 degrees fahrenheit in the prep top cooler in the main kitchen. Except during preparation, TCS cold holding food shall be held at 41 degrees fahrenheit or cooler. HVAC company was coming on day of inspection to repair another reach-in cooler, so I recommended they have prep top checked also at that time. The food items were placed on ice inside the prep top at time of inspection and temperatures will be monitored frequently to ensure proper temperatures are being held.
