4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed that the pizza oven is in need of a good deep cleaning again. Observed a lot of loose food debris on inside of oven and pizza racks inside of oven in need of cleaning. Equipment food-contact surfaces shall be clean to sight and touch and equipment shall be kept free of encrusted grease deposits and other soil accumulations.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(2)(a) - equipment and utensils, constructed of durable materials (c)
Observed that the walk-in cooler door is damaged and actually the door frame is coming loose. Cooler door shall be made of durable materials and properly maintained to open and close properly and protect food items stored inside of cooler.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(2)(a) - floor, walls, & ceilings, cleanability (c)
Observed coved molding under storage racks by walk-in cooler that is missing. Also observed that the several areas of the coved molding are in need of a very thorough cleaning or replacement. Observed ceiling tiles damaged in need of replacing. Observed ceiling vents with black mold and dust in need of replacing or deep cleaning thoroughly. Observed light fixtures in need of cleaning from grease and mold accumulations. Strongly recommend taking care of "mold" issue on ceiling tiles, vents, and lights and checking attic area for possible mold issues.
